Paleo Pork Country Ribs

These just went into the foil with some apple juice, and will let them cook for a few hours. Pecan was used for smoke.

The paleo rub...

2 T. salt
2 T. paprika
1 T. black pepper
1 T. garlic powder
1 T. onion powder
1/2 t. celery seed, ground
1.5 t. oregano, ground
1/2 t. chipotle powder
1/2 t. ground cumin, I used roasted cumin...

I ground up the celery seed and oregano with a mortar and pestle.

The weather is starting to cool and will be another perfect night to grill. I picked up a big package of country ribs in the clearance bin at Safeway so this will be on the menu again tonight.

It taste good but the cayenne has a bit of a bite. I just put a 1/4 tsp in so am sure it will be fine on the ribs. I've not used liquid smoke in decades and was worried about flavor but it's not overpowering.

These were excellent and a keeper. I finished them off in foil - the Weber stayed to hot so brought them into the kitchen and finished off in a 200*F oven. I cooked down the sauce a bit much and got to thick towards the ned. That can be fixed.

It came out great and think I'll try something similar with sauerkraut.

It was good but I was second guessing myselfmon the sauce - it was too thin, even though I followed the directions. In the end it tasted fine.

I’ll add on to this… tonight I’m doing ribs and will use a Memphis Pork Rub my son gifted me for Christmas and sauce with Mr. Hugh’s Hickory sugar free sauce. I’ll add some bourbon to the sauce.

I was looking through the old bbq threads and a lot of folks have come and gone. I saw some good info, too.

Next week, when I get back from Iowa, will have to get some country ribs again.

I’ll have to get back to this one, too.
