Roasted Whole Cauliflower

This is SO easy, and delicious!

A keeper!

I roasted mine a little less time, based on a couple of reviewers who said theirs was a bit mushy.

Here's what I did.

Whole Roasted Cauliflower

1 head cauliflower
EVOO (or ghee - I'd like to try it with ghee!)
Salt or any kind of seasoning you like (I used Penzy's Turkish Seasoning)

Preheat oven to 375 degrees

Cut out the bottom part of the stem and remove leaves. Drizzle EVOO all over the cauliflower and rub with your hands so it's completely oiled, both sides.

Sprinkle with salt and/or whatever seasonings you like.

Put cauliflower in a cast iron skillet. Cover tightly with aluminum foil. Roast for 30 minutes.

Remove foil and roast for at least 30 minutes more. Start testing with a fork.

At this point, I didn't want the bottom to burn, and I didn't want it to get too mushy, so after a half hour uncovered, I turned off the oven and let it sit in there, uncovered, for the last 30 minutes.

Perfect! Moist and tender, but not wet - still had a little "tooth". The brown bottom is delicious!

This is an excellent base for any kind of sauce or gravy, but I just had it with a pat of butter. This time.
