Cajun Deep Fried Turkey

10 gal Peanut oil
10 lb Turkey; up to 15 lbs
6 tsp Salt
6 tsp Paprika
6 tsp White pepper
6 tsp Cayenne
16 oz Liquid crab oil concentrate

NOTE-Not recommended for indoor cooking.

Rinse turkey inside and out. Mix 1 part crab boil concentrate to 4
parts water. Combine dry ingredients with crab boil
solution. Adjust seasoning to taste. Inject turkey
(approximately 2" apart) with mixture using syringe
(available from gourmet kitchen stores.) Cover turkey
with foil and refrigerate over night. Heat oil to
350~.

CAUTION: Use a grease thermometer to monitor the
oil. It may ignite if the temperature goes beyond
375~.

Put turkey in basket and CAREFULLY lower it into
the pot. Cook 5 minutes per pound. Check in 1 hour
using a meat thermometer.

NOTE-This is a great dish,
but should only be attempted by someone who has
experience with doing this. It is also expensive due​
to the large amount of oil needed.

I like that you added caveats to this recipe, Jeff. There is a definite technique to doing this, to avoid tragedy!

I go 3 minutes per pound, plus 5 minutes at the end, for a 12 pound turkey (that's the biggest my pot will take).

I use Cajun Injector's Creole Butter to inject.

Is the skin not the BEST thing in the entire universe????

heck yah it is... i am not fond of the creole butter myself, i put it into the last loin i Q'd and the butter overpowered the other ingredients.. i may try it on poultry though

thats a lot of oil for a 10 lb bird ...
i usually do 12-14 lbs and have never needed more than
3 gals ..

i just put 10 down..its better to have too much than not enough

everytime you deep fry a turkey a different amount is needed...

easy way to measure how much oil is needed is to.....

place turkey in pot you are going to cook in, fill the pot up with water until the turkey is submerged....take the turkey out...the amount of water left in the pot will tell you how much oil you will actually need
