Default foil packet potatoes ...

4 medium red potatoes diced into 1 inch pieces ..
1 medium onion diced 3/4 inch pieces ..
5 strips bacon cooked and crumbled ..
1 cup shredded cheese of your choice ..
1/2 stick butter cut into about 10 chunks ..
seasonings of choice ..

after you dice the red potatoes wash and drain them and then
wrap in a kitchen towel to get them really dry ..
when dry put into a mixing bowl with onions and seasonings of choice ..
i used chili powder, oregano, garlic powder, cayenne powder and salt
and pepper ..
pour mixture into a piece of heavy duty foil ..
top with the butter slices ..
wrap foil and put on grill ..
cook on indirect medium heat for 20-30 mins.
depending on how hot your grill is ..
when done .. open packet carefully and
sprinkle cheese and bacon on top ..
let melt them pull off the grill ..
we topped ours with sour cream ..

chow .. these were the best ever ..
drying the potatoes seemed to make a big difference ...

We do a similar thing here.

Potatoes - Either red cut up, as you did or fingerling or baby red.

I use butter, Italian seasonings and some garlic powder. Wrap and put on the grill about 45 min. DW's fav.

I have to admit I'm SO jealous of your imagination.
For year-I mean YEARS- I've been doing potatoes, onions and carrots in foil wrap with butter salt & pepper on the grill.
I NEVER thought to add bacon & cheese.
What a GREAT idea!
Next time, I guarantee I'll be trying this.

I have done the potatoes in the foil many different ways over the years. I slice my potatoes in thins slices rather than chunks so they cook faster and I usually slice up some onion to put in as well. Oh amd a bunch of garlic. That is the base. On top of that I can add just about anything depending on the mood.

I will say this though, I've never done the drying out thing in the towel. I will need to add that to the process. That's a good tip.

this is why I love this forum. All kinds of little tips to learn here and there for just about anything on the grill. Like that bologna thing last week. We're doing that next Sat....
