Peep's Deconstructed Sheppard's (Cottage) Pie

Serves 4 or 5
Total prep: 15 minutes
Total cook time: 15 minutes



Meat Mixture:
  • 1 1/2 lb lean ground beef
  • 1 small onion - chopped
  • 1 envelope dry brown gravy mix
  • 1/2 cup water
  • 1/2 - 3/4 cup burgundy wine
  • 2 cups frozen mixed veggies
Potatoes:
  • 5 - 6 medium potatoes - peeled & cubed
  • 1/4 cup sour cream
  • 3 TBSP butter
  • 1/2 cup shredded cheddar cheese
  • Sea salt - to taste
  • Ground peppercorns - to taste
  • Chives - fresh chopped or dry - to taste
  • Additional shredded cheddar - optional

  1. Brown beef and onions in pan.
  2. Drain off fat if necessary.
  3. Add dry gravy mix to pan and stir well.
  4. Add water and wine; stir well and cook till thickened.
  5. Add frozen veggies and stir. Lower heat, cover and simmer for 5 minutes.
  6. Place potatoes in pot of salted water and boil till tender.
  7. Drain and mash potatoes.
  8. Add sour cream and butter and stir well.
  9. Stir in cheddar cheese, salt, pepper and chives.
  10. Place mound of potatoes on plate and make a well in the middle to form a cup.
  11. Spoon meat mixture into cup/well.
  12. Top with additional cheese if desired.
