Vegetarian Chili

This is a good recipe we have tried several times. Not my favorite cause I love meat, but a good one nonetheless.

Ingredients:
3tbsp vegetable oil
1 1/2 cups onion
3 cloves garlic, minced
4 ounces fresh mushrooms, sliced
1 large green pepper, chopped
3 stalks celery, sliced
1/2 cup chopped carrot
2tbsp chili powder
1 1/2 tsp ground cumin
1/2 tsp basil crushed
1/4 tsp oregano ground
1/4 tsp marjoram crushed
1/2 tsp black pepper
15oz tomato sauce
14oz plum tomatoes in juice
1/3 cup extra spicy ketchup (or ketchup plus tobasco sauce or pickapepper sauce)
1/4tsp Worcestershire sauce
3/4 cup medium grain bulgur wheat
6oz vegetable juice
19oz red kidney beans, drained
19oz cannellini beans, drained
1 can (about 3oz) pitted ripe olives, drained and sliced

In large kettle, heat 2tbsp oil, add onion and garlic. Cook 5 minutes until onion is tender. Add mushrooms, green peppers, celery, carrot, chili powder, cumin, basil, oregano, marjoram, and pepper. Saute 8 minutes or until vegetables are tender.
Add tomato sauce, tomatoes and juice, catchup and Worcestershire sauce. Cover and simmer 30 minutes.
Meanwhile, heat remaining 1tbsp oil in skillet, add bulgur wheat and cook for 10 minutes. Add vegetable juice, cover and simmer for 10-15 minutes. Stir wheat and beans into kettle. Simmer, uncovered, 30 minutes. Stir in olives and serve.
