I decided to use this easy recipe to experiment with different sizes of Irish Soda Bread muffins.

The recipe made half dozen regular-sized muffins, half dozen muffin tops and a dozen mini muffins. All came out great!

Now I'm looking for an Irish Soda Bread recipe that's less sweet and cake-y, more bread-y. Any have one?

Irish Soda Bread Muffins

Irish soda bread is traditionally made in a loaf shape, but these muffins have the same terrific flavor with buttermilk, caraway seeds and currants. They are easy to make and delicious served warm. —Lorraine Ballsieper, Deep River, Connecticut
TOTAL TIME: Prep/Total Time: 30 min. YIELD:12 servings
Ingredients
· 2-1/4 cups all-purpose flour
· 1/2 cup plus 1 tablespoon sugar, divided
· 2 teaspoons baking powder
· 1/2 teaspoon salt
· 1/4 teaspoon baking soda
· 1 teaspoon caraway seeds
· 1 egg
· 1 cup buttermilk
· 1/4 cup butter, melted
· 1/4 cup vegetable oil
· 3/4 cup raisins

Directions
· 1. In a large bowl, combine the flour, 1/2 cup sugar, baking powder, salt, baking soda and caraway seeds. In another bowl, beat the egg, buttermilk, butter and oil. Stir into dry ingredients just until moistened. Fold in raisins.
· 2. Fill greased muffin cups three-fourths full. Sprinkle with remaining sugar. Bake flat 400° for 15 minutes (10 minutes for muffin tops or mini muffins) or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to wire rack. Serve warm. Yield: 1 dozen regular-sized muffins.
