this was a great little experiment ...
i know london broil is more a technique than a cut ..
but thats what the package said when i bought it so i am
going with it ..
i was a bit leary of this due to the fact that most london broil
is pretty lean .. i believe this one was a top shoulder ..
it had pretty good marbeling and a bit of fat around it ..
so i marinated it in allegreo marinade for 4 hours then
onto the smoker at 225ish for just under 3 hours ..
i pulled it at 140 and it was really good ..
the meat took on a great smoke .. this will
be a regular at my house ...
i did sear it at the end over a chimney of charcoal ..
so next time i will pull it at 125 or so ...
