Gnocchi.... Got any TNT recipes for it?

Never have had it, looking for some good eats with it!

Are they potato gnocchi? Put them in boiling water until they float, & drain. I like mine simply, with melted butter salt & pepper, & grated Parmesan. You can serve as a side with a roast & ladle some of the gravy over the gnocchi. Or, try different sauces like butter & sage, tomato vodka (cream), pesto (cream) sauce, etc.

I've had some in the freezer that I bought a while ago and can't figure out what to do with them either, lol :bonk: This helps, thanks!
 
Also, if you've never tried these little potato dumplings, they are pretty heavy on the tummy. Make half a package to serve as a side, & save the rest for another meal.

I would like to try my hand at making butternut squash gnocchi. If anyone has a recipe, please share.

I was just searching for gnocchi ideas, & wanted to bump Cooksie's (from scratch) recipe up, when the nurse arrived. They do look mahvelous.

I'd like to make gnocchi using butternut squash instead of potatoes. Anybody have a recipe they like?

This sauce over gnocci is excellent.


Marcella Hazans Tomato Sauce with Onion and Butter
  1. Put either the prepared fresh tomatoes or the canned in a saucepan, add the butter, onion, and salt, and cook uncovered at a very slow, but steady simmer for about 45 minutes, or until it is thickened to your liking and the fat floats free from the tomato.
  2. Stir from time to time, mashing up any large pieces of tomato with the back of a wooden spoon.
  3. Taste and correct for salt. Discard the onion before tossing with pasta. Serve with freshly grated parmigiano-reggiano cheese for the table.
Making Fresh Tomatoes Ready for Sauce:
  1. The blanching method: Plunge the tomatoes in boiling water for a minute or less. Drain them and, as soon as they are cool enough to handle, skin them, and cut them into coarse pieces.
  2. The freezing method (from David Tanis, via The Kitchn): Freeze tomatoes on a baking sheet until hard. Thaw again, either on the counter or under running water. Skin them and cut them into coarse pieces.
  3. The food mill method: Wash the tomatoes in cold water, cut them lengthwise in half, and put them in a covered saucepan. Turn on the heat to medium and cook for 10 minutes. Set a food mill fitted with the disk with the largest holes over a bowl. Transfer the tomatoes with any of their juices to the mill and puree

I went with this recipe:

Gnocchi and wild mushroom ragu. The sauce was fantastic! I used
button and cremini mushrooms, along with a little package of dried
wild mushrooms. (Which I soaked in the wine for the sauce, very good.)

I highly recommend the sauce.

As for the potato gnocchi, my wife and I both agreed that we aren't
particularly fond of the texture. Kinda gooey mushy.

Since I got a 3 pack from Costco, the gnocchi experiment shall continue!
I am going to try a recipe that browns them in butter with some herbs,
and see how that goes.

Talk about freaky Kimchee, I was thinking along the lines of mushrooms myself and even bookmarked a recipe.:yum:

That recipe does sound delicious, Kimchee! I like the idea of the fennel seed in there - makes you think you are eating sausages! :)

the fennel was pretty mellow... and I even smashed it some first in my mortar!
From a new jar, too.
(which is good, cuz my wife isn't a huge fennel fan.)

I'll be playing with this sauce in the future... needs to be a little thicker too.
