Cal's Toasted Goat Cheese Salad
(makes 4 salad plates)

(variations on additions to greens can be any combo
you like. Some of my favorites below are:

sliced beets + very thinly sliced red onion + halved smokehouse almonds,
or
oven roasted cherry or grape tomatoes + very thinly sliced white onions + toasted pine nuts,
or
red, seedless grapes + supremed clementines, tangerines or blood oranges, thinly sliced red onion + sliced almonds,
or
thin slivers of radishes, supremed oranges and salted
pepitas)

1 - 8 oz. log of goat cheese, cut into 4 pieces
1/2 cup of toasted panko crumbs (see below for toasting)
1 egg mixed with 1 TBS of water, beaten
vegetable oil for frying
4 cups of mixed salad greens, cleaned and dried
1/2 of vinaigrette dressing; recipe below
bread for dipping/mopping, bread can be toasted.

Prepare your plates with greens and other additions and chill.
Toast panko on a parchment lined baking sheet.
About 300 degree preheated oven for 5 minutes, just until very light golden in color.
Let cool and place in bowl.
Put egg and water in bowl and whisk/beat.
Cut cheese into 4 pieces.
Place enough oil in a medium frying pan to come up about 1". And heat while dipping cheese.
Dip each piece in egg, wetting each side, then in panko, coating each side.
Then place pieces inth the hot oil.
Keep your eye on them, and turn to brown each side;
1-2 minutes, just until slightly oozing.
Remove to papertowels for a minute to drain.
Remove prepared plates from fridge and place toasted cheese in center of greens.
Drizzle vinaigrette over veggies and greens and serve immediately with bread.

Vinaigrette
1 TBS. dijon mustard
2 TBS. white vinegar (I use rice wine)
1 TBS. lemon juice
1 garlic clove, finely minced
6 TBS light EVOO, or safflower oil
salt & ground black pepper to taste

Whisk mustard, vinegar and lemon juice. Then whisk in oil and add salt & pepper.

Ok.. the beets threw me off a bit, but hey... never tried a beet, so I can't say I would not try this!!! I love goat cheese and that is what caught my eye! Thanks for sharing hun!

This sounds really good! ESPECIALLY the beets/onions/almonds. Hell all the variations sound good. Thank you!
