Smile Cheese Grits

2 cups of water
2 cups of whole milk
1 1/2 teaspoons of kosher salt
1 cup of quick cooking grits
1/2 teaspoon pepper
4 tablespoons of butter
4 ounces mild cheddar cheese, shredded

Bring water, milk and salt to a boil in a large heavy bottom pot over medium-high heat.

Slowly add grits while stirring to keep them from clumping. Cover and reduce heat to low and simmer for 5 to 7 minutes, stirring occasionally.
Remove from heat, stir in pepper, butter and shredded cheese. Serve warm.

Keltin, they are also good with some chopped jalapeno in them... cheddar jalapeno grits. I have also baked mine and got a nice brown crusty top, you can make a meal of em!

The milk gives them a nice creamy taste. I hadn't thought of putting jalapenos in them before...yum!
