Not Prime Rib

Our Mexican store runs select bone in rib eye steak on sale for $3.59 pound. I had the butcher cut me about a 4# end cut for a roast.
I did not trim any fat, seasoned heavy with salt and black pepper.
Cranked up the grill to about 600° added a little pecan wood for smoke. Seared on all sides for a nice bark. Had my oven set for 325° insert meat probe and set it for 145° internal temp. Placed in a shallow pan bone side down. My thought was that as the fat rendered it would keep the meat moist. When the probe alarm sounded removed and let rest. Best roast I have ever had. You don't have to have prime to have great eats. CF

Oh my word, CF! That looks incredible!!! And I love the way you cooked it!

I see a little pink juice on the plate - was the steak medium rare????

I was really confused with this until I re-read/sorted it out.

"prime rib" is not a reference to the USDA Grade "Prime" - it has a special and explicit legal exception to "words the marketeer may use and how those words may be used"

whatever, I'd agree a (standing) rib roast - by many names - regardless of "grade" is good eating.

Here is the cooking chart I use always works for me. CF
Beef and Lamb Cooking Temperature Chart
Roasts, Steaks & Chops


Rare
120 to 125 degrees F
center is bright red, pinkish toward the exterior portion
Medium Rare
130 to 135 degrees F
center is very pink, slightly brown toward the exterior portion
Medium
140 to 145 degrees F
center is light pink, outer portion is brown
Medium Well
150 to 155 degrees F
not pink
Well Done
160 degrees F and above
steak is uniformly brown throughout

Ground Meat


160 to 165 degrees F


no longer pink but uniformly brown throughout
