Ingredients
2 cups roasted cashews
1 large egg white, lightly beaten
1/2 cup granulated sugar
1 teaspoon ground ginger
1/2 teaspoon ground red pepper
Directions
1. Lightly oil a 15x10x1-inch jelly-roll pan. Toss the nuts with the egg white in a large microwave-proof bowl until coated. Combine the sugar, ginger, and red pepper in a cup, then stir into nut mixture.
2. Microwave on high (100 percent power) for 4 to 6 minutes, stirring after 3 minutes, or until caramelized. Spread in the prepared pan and cool. Separate into small pieces. Makes 32 servings (2 cups).
