Grilled Chili / Lime Chicken Breasts

Grilled Chili / Lime Chicken Breasts

2 tsp. chili powder
2 tsp. packed brown sugar (I use Light)
2 tsp. grated lime zest
1/2 tsp.salt
1/4 tsp. garlic powder
1/4 tsp. cayenne (more or less..)
4 boneless skinless chicken breasts (about 1 1/4 lb)
2 tsp. olive oil

Heat gas or charcoal grill.
In small bowl, mix chili powder, brown sugar, lime peel, salt, garlic powder and cayenne. Rub both sides of chicken with oil, then with spice mixture.

Place chicken on grill over medium heat. Cover grill; cook 10 to 15 minutes, turning once or twice, until juice of chicken is clear when center of thickest part is cut (170°F).

Although I HAVE been craving a burger lately, hmmmm..

But these will be done soon, oh yes.

Copied that one and saved it in my recipe file - thanks. Sounds really good. I like to keep grilled chicken breasts in the frig during summer to slice up over a green salad. This would work well because of the added flavor.

I fired up the Weber kettle tonight for the first time in a long time, to grill some of these bad boys.

Only thing I did differently is to sub chipotle chili for the cayenne. Wonderful chili and lime flavors!

Methinks you've improved on this recipe..... I'll sub the Chipotle powder for the Cayenne.
Cayenne brings the heat, but Chipotle bring character !
