I'd intended to make water chestnuts wrapped in bacon, but when I opened the can of water chestnuts, they looked kinda gray. So, I chucked them and picked some fresh MONSTER radishes from my garden.
I cut the rads into bite-sized chunks, tossed them in a bowl with some hoisin sauce and a little soy sauce and let them sit for maybe 10 minutes.
Cut the strips of bacon in half, wrapped each radish chunk, and secured with toothpicks.
Broiled till brown and crispy.
They were good, but the radishes did not stay crunchy like the water chestnuts do. They had the EXACT texture of scallops, though!
So these are Poorman's Scallops Wrapped in bacon!
