Onion Rings

1-1/2 cups flour
1 to 1-1/2 cups beer
1/2 tsp. garlic powder
1/4 tsp. baking powder
salt and pepper

Mix all ingredients together until smooth. Let sit for 1/2 hour. Dip onion rings in batter and let sit for a minute. Deep fry until golden brown.

That looks good. One of the TV chefs has also suggested soaking the rings in milk before battering them, have you ever tried that?

I use Pat Neeley's recipe from FN - the onions are soaked in seasoned buttermilk for 5 minutes, then dredged in flour and cornmeal then fried...yummmm

rickismom...........what exactly does it do??

It not only helps the onions season, it also makes a very light, crunchy batter - not as heavy as beer batter. I soak mine in the buttermilk then take a paper bag that has the flour, cornmeal, salt and cayenne and dump the soaked onion rings in and shake the bag! It's fun for kids to do and there's hardly any mess at all :smile:
