The challenge for the week of July 12 - July 19 is Eggs!! Now, I know many many of you have eggs at least once a week! C'mon, lets see what you make out of them!
Don't forget custards, flans, and brulee, too! Egg drop soup! Stuffed meatloaf! Nicoise salad!!

Here it is for what it's worth.
Carne Asada Omelet, added a little sharp cheddar in, avocado and sour cream topped with Pico de Gallo salsa topped with Queso and some fresh flour tortillas.
I have a Q&E killer egg drop soup I will try to make later this week.

This is too simple. I'm almost (but not quite) embarrassed to post this as a competition dish. But it is what I made for breakfast this morning.

Scrambled eggs with a bit of diced ham, scallions, and a little grated swiss.

hmmm, so I took the challenge, cooked some eggs - they may have been bad - they puffed up . . .

Guts, SS, and CMan.....Wonderful lookin egg dishes....

Guts, the omelet looks out of this world...That is one dish I have not mastered because mine fall a part when I try to flip, even though I think it is set enough to do so...Nice!

SS, scrambled eggs are another dish I do not seems to be able to make like others. Yours look like they are set just right as far as texture plus looks very creamy....Very nice also.....

CMan, to be honest, I have never cooked a souffle and really don't know what it consists of and also what taste it should be....May feel me in. Looks great....

on that one, cheddar cheese with a smattering of finely diced shallot.

a souffle is whipped egg whites with a thin roux sauce 'folded' in - the oven heat causes the air in the egg white to expand hence the height factor. the flavor can be many things - shrimp, cheese, ham, sausage, etc.

I never mastered the parchment paper 'high hat' collar routine . . .
