Tonight I wanted grilled pork chops, but also thought a bacon gravy on them would be nice. Something "hearty", so I didn't need to mess with a lot of sides to fill me up.
So out came the bacon I bought for $1.50/lb (package). Well worth it, but not very smoky.
And the featured pork chops. Aren't they gorgeous? Just a little over 1/2" thick, which I think is perfect for just about anything.
Seasoned with salt, pepper, onion powder and smoked Spanish paprika.
After they were on the grill and flipped once, I seasoned the other side by getting rid of the spanish paprika and adding a little cumin and garlic powder instead.
The bacon is going OK. I started it in a little EVOO and cracked pepper. After it was done I took it out and let drain on some paper towels. The smallish amount of bacon grease I left.
I had diced up some onion and potatoes. I said I wanted a hearty gravy... And added that to the skillet to cook. I seasoned again with s&p and also added some Italian seasoning.
The chops were on cooking and the other side seasoned.
Mushrooms were added to the impending gravy mixture.
The chops were flipped.
Butter was added to the skillet to start to make a gravy. It already had a little EVOO and a little bacon grease, but not so much that a little butter couldn't be added.
After a little flour was added, it didn't take long to thicken.
Some chicken stock was also added to balance things out and get a gravy consistency.
