Grilled pork chops and bacon gravy

Tonight I wanted grilled pork chops, but also thought a bacon gravy on them would be nice. Something "hearty", so I didn't need to mess with a lot of sides to fill me up.

So out came the bacon I bought for $1.50/lb (package). Well worth it, but not very smoky.

And the featured pork chops. Aren't they gorgeous? Just a little over 1/2" thick, which I think is perfect for just about anything.

Seasoned with salt, pepper, onion powder and smoked Spanish paprika.
After they were on the grill and flipped once, I seasoned the other side by getting rid of the spanish paprika and adding a little cumin and garlic powder instead.

The bacon is going OK. I started it in a little EVOO and cracked pepper. After it was done I took it out and let drain on some paper towels. The smallish amount of bacon grease I left.

I had diced up some onion and potatoes. I said I wanted a hearty gravy... And added that to the skillet to cook. I seasoned again with s&p and also added some Italian seasoning.

The chops were on cooking and the other side seasoned.

Mushrooms were added to the impending gravy mixture.

The chops were flipped.

Butter was added to the skillet to start to make a gravy. It already had a little EVOO and a little bacon grease, but not so much that a little butter couldn't be added.

After a little flour was added, it didn't take long to thicken.
Some chicken stock was also added to balance things out and get a gravy consistency.

WINNER! Oh my!! I could eat a bowl of that gravy all by itself!!! On second thought some bread for dipping would be nice :heart: :heart: :heart: :heart: My heart might not like it but my tummy sure would.

IC entry?! Noooo..... I'm not joining in on the IC contest. I guess you could say my race car doesn't have a big enough engine. Or my pantry doesn't have enough ingredients. Both literally and figuratively speaking :wink: . I'm more of a recipe follower than creator, but I am looking forward to copying something that catches my eye :w00t: and seeing what you all come up with.

And thanks folks! Since this gravy isn't made with drippings from frying the main course, I can see me making this again and putting it on a few dishes. Or just eating it with a spoon :lol:

The IC thing isn’t a contest. It’s more of a “Hey everybody, let’s all cook X and see what we can come up with”. X this time is pork, and you did a knock out job using pork TWICE! There is no judging, winner, or prize in the IC thread as far as I know. So why not post a link to this there?

Where, in the contest thread? I suppose. It is a good way to find a bunch of recipes using the same ingredient (or food group).
 
Anywhere. Next post. I'm thinking in the end we ought to consolidate all "entries" into an IC2 Battle Pork Results thread so we have all pork recipes at a glance in one thread without so many other posts to wade through to find them all. It would be a nice reference to get ideas on what to do with pork.
 
Damn! How did I miss this post yesterday. I saw the destination, but the trip was as much a pleasure as looking at the final product. Outstanding job. And I here I sit eating leftover s'ghetti with bottled sauce. Keep up the good work. You're making my taste buds tingle.:clap:
 
I made this for dinner tonight! I didn't have pork chops so I used chicken breasts and used garlic instead of Italian seasoning.

OH MY GOOOOODNESS!!! It was a wonderful dinner.

I'll be making it again for sure.
