Black Bean and Corn Salad or Salsa

This is really supposed to be a salad, but I used it as a salsa on pulled pork tacos.

Since I used it as a salsa, I only made 1/2 recipe. I had to do a little deleting and subbing, but it's basically the same. It's tangy!
 
I made this yesterday (tweeked it just a bit), but forgot to add the avocado!! The best part!

Had it as a side to fish tacos - easy, and refreshing!

Black Bean and Corn Salad

Ingredients
· Juice of 1 ½ limes
· 1/2 cup olive oil
· 1 clove garlic, minced
· 1 teaspoon salt
· 1/8 teaspoon ground cayenne pepper
· 1 (15 ounce) cans black beans, rinsed and drained
· 1 microwave package of frozen corn kernels, nuked 2 mins and drained
· 1 avocado - peeled, pitted and diced
· 1 red bell pepper, chopped
· 2 tomatoes, seeded chopped (or 1 large tomato)
· ½ red onion, small dice (or 6 green onions, chopped)
· 1/2 cup chopped fresh cilantro (optional)
Directions
1. Place lime juice, olive oil, garlic, salt, and cayenne pepper in a small jar. Cover with lid, and shake until ingredients are well mixed.
2. In a salad bowl, combine beans, corn, bell pepper, tomatoes, red or green onions, and cilantro. Shake lime dressing, and pour it over the salad. Stir salad to coat vegetables and beans with dressing. Dice or slice avocado and place on top of the salad just before serving.
