Corned beef is almost done cooking. Then will be chilled for easy thin slicing and reheating. DD’s will have hot CB and cheese sandwiches. Hub and I will be having potatoes and cabbage.

I bought 2 bottom round roasts on sale. I cut one into small cubes and bagged into one pound potions for beef soup. And the other one cut into large chunks for pot roast. All the bags went into freezer.

Used leftover chicken to make chicken salad sammies, plus coleslaw and Fritos, which were BOGO at the grocery this week, with 1 bag earmarked for Frito pie soon.

I ended up staying and working until 11 last night!
So.. dinner was tortellini and salad.

Peeps, I'm going grocery shopping today to find Mama Mary pizza crusts.
I'll make my own. :wink:

Friends and I did a Portuguese feast (and a few other dishes) over the weekend.

Had linguica, chourico, several Portuguese cheeses, tapanade, shrimp mousse, homemade bread, Portuguese kale soup, salt cod-potato-onion casserole and lemon cupcakes. And Portuguese dry red wine.

A great game of Trivial Pursuit and the movie "Judy". Lots of fun and laughs with good friends!

I made one with the works, the other with onions and bell pepper.
The Classico sauce is delicious.
Thanks Peeps for always speaking of these wonderful crusts.
They ARE delicious!
I'll freeze the second one for another day.

Never saw Tuscan. I usually get the thin and crispy. I cook on pizza stone (bottom rack) at 500F about 3 minutes or till cheese is melted.
I never replaced the pizza stone I used to have, but I'll sure be looking for one.
I baked them per the package instructions, 425° about 8 minutes.
My store only had the ones I bought and the Tuscan.
I did see Mama Mary pepperoni too, but I bought the store brand.

Today, we had mac and cheese for brunch.
Tonight's supper, will be Chili with beans over rice. Chili o Mix seasoning!
We like it!

Chili didn't happen. DD is cooking up a storm, for the workers and crew in Philly tomorrow.
We had quick scrambled eggs and muffins for supper.

I like them breaded, altho SWMBO doesn't care much for panko style - need to look for a coarse "normal" bread crumb. mixed with ~30% cornmeal makes a nice breading.

Your pizza looks wonderful. I don't think I've ever seen the pepperoni or sauce. They sell the whole wheat, thin & crispy and regular crust at my store.

Yup, the pepperoni was right there on the shelf next to the crusts.
I did look for the thin like you use, but there were the two I've mentioned only.
Further down in the pizza sauce section, I didn't see the MM brand either.
I love Classico sauces of all varieties and was thrilled to see a pizza sauce.

Mother In Law always used cracker crumbs for fish frying.
Flour ..... egg.......then cracker meal / crumbs.

cracker crumbs - and oyster cracker crumbs are also good.

they can be a little lumpy which can make frying a flaky/tender fish tricky tho.
I don't like them powderized (like in blender) so getting the consistency can be a pain....


I think I've tried most of the "crackers" - Ritz, CheezIts, stone ground
mini-shredded wheats, cornflakes (still a fav for oven fried chicken...)
things with strong flavors (like Ritz) really have to "go with" with breadee item or you get really weird taste combos.

I had a roast beef sandwich, scalloped potatoes and mixed vegs.
It wasn't bad.
I'm taking a Michael Angelo's tri-color cheese tortellini gourmet bowl for my dinner tonight.
