Okay, here's a grilled dinner I did tonight. One Lilylove and Paul would like!

I laid the pitas on the grill to warm them up a bit. Fold up the pita bread around the sandwich, like a taco. Delicious!

You can't see the cucumbers on the sandwich because they are behind the burger halves (I need to take a course in food photography!)

Lamb Burgers, Grilled, with Feta Sauce

1 ½ pounds lean ground lamb
2 T minced shallots
2 T minced garlic
2 T chopped fresh mint leaves
2 teas chopped fresh oregano
1 teas salt
½ teas freshly ground black pepper


4 pita breads or buns
Sliced tomatoes
Thinly sliced cucumbers
Chopped Greek olives
Feta Sauce (recipe below)


Combine the first 7 ingredients and blend with your hands, but don’t overwork the mix Form into 4 patties.

Lightly oil the grill rack. Cook the burgers about 5 minutes a side, or to medium rare.

Serve patties with pita or buns. Top with Feta Sauce, tomatoes, cucumbers and olives.

Feta Sauce

Makes about 1 ¼ cups

2 cups plain yogurt (I use Greek)
½ cup crumbled feta cheese
1 T (or more) olive oil
1 ½ teas minced garlic
1 ½ teas fresh lemon juice
¼ teas salt
Pinch cayenne
3 T chiffonade of fresh mint leaves


Line strainer with cheese cloth or coffee filter, and put over a bowl. Place yogurt into the lined strainer and put in refrigerator to drain for at least 3 hours, or until yogurt is thick.

In a blender, combine all ingredients EXCEPT the yogurt and mint, and process till smooth, adding a little olive oil at a time, if necessary. Add strained yogurt and pulse to combine. Fold in chiffonade of mint. Cover and refrigerate until ready to use.

Ummmm looks so good Lee. I love Gyro's and that's what this reminds me of. :D :thumb:

My smoked chicken:

I rubbed it vegetable oil and sprinkled on some onion powder, garlic powder, and seasoned salt. I used pecan chips and tried to keep the temp around 300.

Dinner last night was:

- grilled thin pork steaks lightly rubbed with Smokin' Guns BBQ rub and grilled over charcoal 5 minutes per side

- grilled fingerling potatoes, the larger ones cut in half short-wise to make them the same size as the small ones; nuked 8 minutes till almost done, tossed with olive oil, salt and pepper, put into a grill basket and grilled to finsh

- wilted lettuce salad (my Aunt Stella's recipe, below).

ABSOLUTELY PERFECT!!! The pork steaks were medium and everything was delicious - a fine "First Night of Summer" meal!

Wilted Lettuce Salad, Stella’s

For 4 people

Leaf lettuce, torn into bowls, about ½ head per person
5 slices of bacon, diced and fried till crisp


Dressing (adjust these amounts to your own taste – it should be
slightly sweet and slightly sour)


¼ cup minced onion
2 teas sugar
½ teas salt
¼ cup cider vinegar
4 T. water


Remove fried bacon pieces from fat and drain on paper towel. Mix the
dressing ingredients and pour the dressing into the hot fat. Bring quickly to boil,
for about a minute, then pour the dressing over the bowls of torn lettuce. Top with bacon pieces,
freshly ground black pepper, and toss.

This is from memory. I'm pretty sure the box said New Braunsfels Hondo Jr. The temp gauge says CharBroil. It's a very small offset smoker/griller. From what I read yesterday, it's a COS (cheap offset smoker) :lol:.

Looking good ladies!! I'll get involved in this later in the challenge when my daughter comes to visit!! No point in bringing out the grill just for myself:sad:

I've got a pork butt. That's about as far as I've gotten :biggrin:. I've never done one before, but I figure I've gotta try. I have been doing quite a bit of reading on "how to," so I'm planning on rubbing that butt tomorrow. Fingers crossed!
