Tilapia with Roasted Vegs (7P+)

This was good, and easy, and you can use any vegs you have on hand!

Tilapia with Roasted Vegs (7 p+ per serving) - 4 servings

4 tilapia filets
2 large potatoes, cut in quarters
2 sweet peppers, of any color, cut into 1 inch pieces
4 cloves garlic, minced
1 large sweet onion, cut in large chunks
2 teas. olive oil
2 cups cherry tomatoes, halved
seasonings of your choice
lemon zest
12 green olives, sliced
lemon wedges

Preheat oven to 425

Foil a large baking pan with sides. Pam it. Put the potato wedges, peppers, onions, and garlic in the pan. Toss with the 2 teas of olive oil and seasonings of your choice.

Roast vegs for 30 minutes, stirring every 10 minutes. After 30 minutes (or when potatoes are almost tender), add the tomato halves, and toss with the other vegetables to coat. Lay the tilapia filets on top of the vegs. Sprinkle with seasonings and lemon zest. Roast 10 more minutes.

Serve one filet with 2 wedges of potato and 1/4 of the vegs. per person. Sprinkle olive slices on top of the fish. Serve with wedges of lemon.
