Asian Cucumber Salad

2 cucumbers peeled, halved, seeded and sliced 1/4" thick forming crescents
1/2 cup seasoned rice vinegar
1/4 cup water
1 Tbsp tamari
1 Tbsp sesame oil
1 Tbsp sugar
2 - 3 cloves garlic finely minced
Fresh ground pepper to taste

Combine everything but cukes in a bowl and whisk. Add cukes, toss and place in refrigerator for 1 - 2 hours before serving tossing a few times.

Enjoy Lee. I have 2 hills of English (burpless) cukes planted with the goal of trellising them. Looking forward to this served ice cold on a hot summer day.
