Wonderful post, Peep! Thank you!

So you use a chunk of fresh mozzarella for the cheese on top?

Thank you Lee.

I use either sliced mozzarella block or shredded mozzarella (bagged or fresh grated). Depends what I have on hand.

I had a block of mozzarella and pizza sauce left from making ham calzones so that's what I used.

I like to cut the eggplant in thin, lengthwise slices. After cooking and draining, I make a double stack "Napoleon" with the motz being the first on. It helps from allowing the sauce directly on the breading. Once the stack is complete, into the oven @ 425F to melt and brown the cheese. I do not like the gloppy layered casserole style.

Absolutely delicious!

I love the slices even without the sauce and cheese! Perfect!

Looks fantastic Lee!

I used have to hide them while draining. DD”s and hub would eat them before they got sauced and cheesed! Lol
