Good Friday

Easter

Colored eggs
Italian Easter Meat Pie
Stuffed artichokes
Greek Salad
Eye Round Roast

Mashed or Baked Potatoes (chives & sour cream)
Steamed baby spinach

I have nothing planned. There is a duck in the freezer needs some attention and may do it. I'm ushering the 0800 service so have the rest of the day to cook.

Well I will be starting my pre-holiday prep today.

Today:
Prepare the cod cakes tonight and allow to rest/firm up overnight.
Prep meats and cheeses for Easter meat pie

Ham, mashed potatoes w/ ham gravy, green bean casserole-- only Ali makes it different from mine.
Noodles from the Amish market, Hawaiian dinner rollz, deviled eggs,fruit salad, 3 pies, cake and tons of candy sitting around.
I went nuts with the Easter basket fillers lol

God, that meat pie looks amazing! If I was at your house, Peep, I'd fill up on that and forget the rest of the stuff.

My friend, Kathy, and I had my take on a Polish Easter dinner at my house last night.

Kathy's Easter meal tradition is Chinese. We'll have that at her house tonight (photos later).

Last night's Polish menu:

Roast lamb
Blue Seal kielbasa (from Chicopee, MA)
Pittsfield rye bread (from Pittsfield, MA)
Colored eggs
Horseradish (Farmer's brand)
Buttered and dilled cabbage that was boiled in water with a couple of splashes of vinegar

These are the pics I just got.
The ham was from Kroger and just delicious, the whipped cream cheese and chive potatoes (look Shermie, I used the mixer lol).. the ham gravy is wonderful and of course the green bean casserole.
I'll post dessert and others later.
That plate was all I could handle for now.

The lemon cake, just like a poke cake.
Yellow cake mix, lemon jello, confectioners sugar whipped into whipped topping w/A little lemon juice.

I am officially stuffed!

Easter dinner:

Eye round roast, steamed baby spinach, whipped potatoes (with cream cheese, sour cream, butter, salt pepper and chives) and burgundy pan gravy.

We kept it simple - emotional day. I did a Smithfield (applewood smoked) half ham in the Dutch oven, baked potato, deviled eggs, and pickled beets. The ham was one of the best we've had and will go back to WinCo tomorrow to see if any are left.

I spend a new bottle of Beaver Brand Horseradish and it's not for the young.

Last night I took the beet juice from several jars of pickled beets and put them in with 11 leftover hard boiled eggs. Someone put a raw egg in the the hard boiled - April Fools on me? I'll leave them sit in the juice for a week or two before trying them.

Christmas we had a Hormel ham and it was excellent. WinCo didn't have them for Easter so got the Smithfield. It was smoked with applewood and excellent.
