With the leftovers we had, I decided to make me an old Taco Bell favorite, an enchrito. Anyone remember those?

I had to look up "enchrito", Sattie!

So good to have you back, posting wonderful ideas and photos!

When I was a kid, it was one of my favorite things to order from Taco Bell. You can still order it, but it's not on the menu. I just recently started making them myself, it's just to easy!

Worked all day on prepping 5 new 2-panel doors for the kitchen, so DW just thawed some chicken soup, added rice and made grilled cheese with tomato sandwiches. Then back to painting the final coat on the last 4 cabinet doors. Hung them in the island this morning. Now I'm painting doors and priming jambs today.

hmmmmmm, never cooked pasta on a sheet pan - how's that go?

yummy, from the looks of it!
The veggies were roasted in the oven on the sheet pan. The pasta was cooked the conventional way, then the two were merged with some EVOO to keep the pasta from sticking to itself.

I tried a new recipe last night. Chicken Spinach Skillet. Everything made in one pan including the pasta. It was pretty good. I took it to work for my son and I and he gave it a thumbs up!

there are two kind of people in the world.

- those who enjoy fruit cakes
- those who prefer only automatic door openers.

here's this year's version. did not have whole pecans to mark the top slice points.
not hard sugar glazed; working on my "hard sauce" recipe - any help/tips appreciated. Crossman "Hard Sauce" still exists, just not in my geography.

this pix is the fruit cake still "hot" - like just out of the oven.

oh. the recipe calls for brandy. I use bourbon. in the pix you can see I am testing the quality thereof.....

this is real life - real time.

when I turned on the computer this morning, it told me it did not have a hard drive.

so I put in the Rescue Disk - that bombed

tried to restore from Win7's 'built in' function - that doesn't work

so I put in the CD's (4 of them...) I bought on the belt&suspenders theory - 3 hrs later they bombed

so I re-put in the Rescue Disk and it seems to have fixed the mess.

any more fun and I'll have to make myself settle down.....

Well, I've never tried hot-out-of-the-oven-fruitcake, but that way, with a bourbon chaser, I bet I'd like it.

Maybe.

It sure LOOKS good!

Been busy at the church, and with a friend of Tina's who is on her death bed!
Not much cooking going on.....but today, Tina made beef stroganoff over noodles.
It was great, and I had two dishes full.
Drakes Ring Dings for dessert.

Re: Screamin pizza

That looks good!! Never seen it before.

Peep, check out the Mano Cornuto ( on the pizza box!)
I spotted that right away! LOL
I have one or two gold ones from Italy in the junk jewelry box somewhere.

I don't think we have that pizza in the area!

Today's the day!

I'm about to season and smoke a Pork Loin in my Stovetop Kettle Smoker!!

With it, I want to have the Green Bean Casserole & some rice - a simple meal! I'll take some pics of the meat as I go along and post them here, from raw to done. :weber:

Looks great, Sherm. Last night DW came home late from having a temporary crown on a tooth that chipped and lost the filling, so I made cheese omelets, bacon and toast for dinner.

Tonight will be something with the pork chops thawing in the fridge.
