Thanks Doc. For those of you who are not trying to lose weight and would like a full flavored stew with all of the calories that come with it :

Sub whole milk for the skim and you can use chicken parts with the skin on for the b/s breasts (the original recipe calls for chicken thighs).

Brown the chicken in a little Olive Oil in your Dutch Oven, remove the chicken. After you assemble the stew, nestle the chicken parts back into the liquid, and change the cooking time to about an hour. Remove the chicken, remove the skin and take it off the bone. Then return it to the stew when you add the peas and parsley.
