This is from Jim Chee's cookbook. He said he made it all the time as a kid to have as an after-school snack (imagine today's American kids having that as an after-school snack?)
Anyway, I LOVE this stuff! I make rice just to have it! It's one of those things that I take a forkful of, every time I go in the fridge.
Take cooked rice, add a splash of veg or canola oil (not olive oil, it's too strong a flavor), add a couple of splashes of soy sauce, and chopped scallions.
I could eat a whole 2 cups of this!
I adore long grain white rice, butter and salt as a side dish, but in my effort to eat healthier, I make this and have it at room temp, or even cold.
And I use brown rice.
Add anything you want to it, to make a nice summer salad dish.
