GRANNY'S POKE SALAD

1 to 2 lbs. Poke Salad
6 to 8 slices bacon
1 lg. onion
2 eggs, hard cooked and sliced

Pick and wash poke, bring to a rapid boil for 20 minutes.
Drain and rinse with tepid water.
Bring to a rapid boil, starting with cold water, for a second boil for 20 minutes.
Again drain and rinse with tepid water.
Now for the third time, starting over; cold water, bring to a rapid boil for 20 more minutes. Drain and rinse with cold water. Let drain completely.

Meantime fry bacon and save drippings; set aside.
Clean and cut onion in quarters.
Take drained poke and Cook in fry pan that you fried your bacon in.
Add 1/4 cup of drippings from bacon.
Add onion, 1/4 cup of water, salt to taste.
Let steam fry until onions are sauteed, about 15 to 20 minutes.
Season with butter and vinegar if desired.
Serve and garnish with hard boiled egg and bacon.

Some of you all never been down South too much...
I' gonna tell you a little story, so you'll understand where I'm talking about
Down there we have a plant that grows out in the woods and the fields,
and it looks something like a turnip green.
Everybody calls it Polk salad. Now that's Polk salad.
Used to know a girl that lived down there and
she'd go out in the evenings to pick a mess of it...
Carry it home and cook it for supper, 'cause that's about all they had to eat,
But they did all right.

Down in Louisiana
Where the alligators grow so mean
Lived a girl that I swear to the world
Made the alligators look tame

OK apparently DW says we have a bunch of this in our yard, I had no idea! She wants to know when is the best time to harvest it to make this??

I don't know. I don't eat weeds, lol. j/k, I never ate it. dh grew up on it though. I could ask MIL when I talk to her. All dh remembers is that you have to boil it several times and know what to do with it or you can get poisoned.

LOL that is what reminded DW that she had this in the yard... which reminded me someone had posted a recipe, and here we are now! LOL.
