Day is going well.
Just got the little ones down for a nap.

The potatoes will be mashed with milk and butter, and a little Philly cream cheese.

Thank you looks great. I have a package of really thin pork chops in the freezer. How long do you think they will take to cook? Maybe half the time?

Probably?
The ones I've got on the counter thawing are thick with a nice fat edge.
That will help ensure they come out moist and tender. (I hope!)
I do want the slight crispy from the coating mix.

I do want the slight crispy from the coating mix.

If you want them crispy I would follow the recipe. BUT after breaded coat with the melted butter on both side. Then place on a rack in a cookie sheet. Then follow cooking instructions. The air circulation should help crisp them up. I think that's the way I'll do mine (when I get to them).

Can't wait to see the pictures.

They are tender and juicy, but next time I'll use a rolling pin to crush the stuffing mix finer.
Mine came out close to one in particular at the recipe links photos.

I was thinking of grinding the stuffing down to bread crumb consistency in the food processor.

Yes, Peeps they did.
The more powdery parts of the stuffing mix clung to them after I pressed them into it after the egg dip.
I was careful when turning them halfway through baking time.
I did 375°, 20 mins per side.

Oh, these are the best oven fried pork chops ever!

I did them in my new super duper convection toaster oven, 425 degrees, 15 minutes total.

Crispy on the outside, moist and tender on the inside - absolutely delicious!

This is a keeper, Sass!
