Chocolate Mayonnaise Cake with Peanut Butter Icing

Dry Ingredients:
2 Cups of All-Purpose Flour
1 Cup of Sugar
2 teaspoons of baking soda
1/2 cup of unsweetened Cocoa Powder

Wet Ingredients:
1 Cup of Mayonaise
1 cup of water
1 teaspoon of vanilla extract
Preheat oven to 350 degrees F.

Grease and flour a 9 x 13 glass baking dish. Set aside.

In a large bowl, combine all of the dry ingredients.
Make a well in the center and add all of the wet ingredients.
Mix well with a wire whisk until the batter is smooth.

Pour into the 9 x 13 baking dish and bake for 25 to 30 minutes.

Check by inserting a toothpick in the center.
If it comes out clean, the cake is done.
If not, bake another 5 to 10 minutes or until done.


For the icing:

Light And Fluffy Peanut Butter Frosting:

1/2 cup of butter, room temperature
1 cup of Creamy Peanut Butter
2 cups of Confectioners Sugar
1 teaspoon of vanilla extract
5 tablespoons of heavy cream
(if you don't have heavy cream you can substitute milk)

In a large mixing bowl, cream together the butter and
peanut butter until smooth.

Turn the mixer down to low and gradually add the powdered sugar
(otherwise, you'll be cleaning powdered sugar off the ceiling, walls,
your face...I think you get the picture).
Add the cream, on tablespoon at a time until it reaches the desired consisitency.

Beat at least 3 minutes until it is light and fluffy!
Make sure your cake is completely cooled before you frost it!

I have made the chocolate mayonnaise cake before, but never though of a peanut butter topping!!

I've never had mayonnaise in cake - I'm wondering how that tastes.....

It tastes like the best chocolate cake you've ever had! If you think about it, mayo is basically eggs, oil and salt (things that you put in a cake anyway) along with a little lemon juice. It's an extremely moist cake.

Oh, Mama! Your cake is everything you said it is and more. Jerry and I just had a taste with our afternoon coffee (we couldn't serve it to our guests without tasting it, right?). It is delicious. Moist, lots of chocolate taste, and the frosting is creamy and wonderful. Thanks so much for the recipe. This is my new chocolate cake. And it is SO easy to make.

This recipe has been in my family for a long time. There are other mayonnaise cake recipes out there but they aren't as chocolatie. The frosting is light and airy which is something you need since the cake is so rich. I'm glad you're enjoying it!

One question when you mention Mayonnaise? Can we use Miracle Whip or does it have to be Real Mayonnaise like the Hellman's brand?

Mama? It seems to me that using Miracle Whip would introduce a variety of flavors that might not be compatible...have you ever tried it? Also, because the mayo provides the necessary fat in the cake, I'm not sure what using lowfat mayonnaise (which has other additives) would do to the texture of the cake. It might be worth a try.

Actually my sister has tried it with Miracle Whip and she likes it. I've not tried it though. I've not tried it with the low fat mayo either. If you decide to experiment with it, let us know.

If I remember correctly, it makes about 16 to 18 I think. It makes a lot of frosting so unless you want to pile it high on your cupcakes, you might want to cut the frosting recipe in half.

HMMMMMMMMM for filling I may need to 1/4 or 1/8 it. LOL
