1 c AP flour
1 stick of butter
1 c cheddar, gouda or gruyere cheese
1 c heavy cream
4 egg yolks
salt and pepper
small bunch of red radishes, cleaned and sliced

Preheat oven- 425
Sift flour in bowl then cut in the butter until course.
Stir in half the cheese. Add 1/4 c of the cream and toss to moisten to form soft dough.
Place dough in 9" pie plate and press with floured fingers, then prick with fork.
Bake for 10 minutes, then cool.
Lower oven temp to 325.
Sprinkle remaining cheese over bottom of cooled crust.
Beat eggs, the remaining cream and add a little salt and pepper.
Pour over cheese.
Arrange radish slices over top and bake for 20-25 minutes.
