I had a coffee yogurt for breakfast and chicken soup for lunch.

No clue at the moment what's for dinner tonight.

Well I did a quick review of fridge. There are 2 large chicken breasts and fresh string beans that need to be used.

There is also a 1/2 lb. of mozzarella. Maybe chicken parm with green bean salad or an Asian style chicken and bean stir fry. Will decide later.

I don't know yet.
DIL and grandies are going to her parents for Sunday dinner.
My son is going to be working until late.
I'll round up something.
Maybe soup.
Lord knows I've been snacking all day thus far.
Crab crackers, cashews and fruit oh my!

Thanks Peeps, for the idea.
After looking deep into the deep freezer, aha!
Chicken breasts!
I'm doing them in the oven.. might brush with bbq sauce at the end.
Stove Top stuffing.. and the rest of my lingering fruit salad sitting sad in the fridge wanting eaten.
This too will be son's dinner when he gets home tonight.
I'll post pic later.

We had Chinese take out last night.

At the moment it is, “Rain, wind and flood warning Oh My!”.

I took out a turkey breast to thaw. If all goes well it should be roasted (maybe smoked in stove top smoker) turkey breast, stuffing, mashed sweet potatoes (maybe), steamed asparagus (maybe green beans also) and gravy.

If that doesn’t work out it could be the chicken (if not used will go in freezer) and string beans meal no one wanted me to make last night.

I don't know about dinner tonight.
That's gonna be up to DIL from now on Monday and Wednesday's, as well as Sunday evenings.
I'll get home around 4:30ish.
Not that I'm to be putting in that many hours per day.
I'd like for her to take over as chief cook and bottle washer, tyvm.

Well I deboned the whole turkey breast and cut it so I have 2 split turkey breasts. They are in the oven roasting.

I also made some cherry cheese Danish which cooling and awaiting to be drizzled.

Dinner was roasted turkey breast, stuffing, pan gravy, cranberry sauce, steamed asparagus topped with parm reg and pecorino romano.

Craig marinated some chicken thighsSubday in tequila, lime juice, honey, and possibly some other things, then grilled them. He also made a green sauce with roasted tomatillos and poblano chilis, onions, garlic and ??. Last night, he shredded the chicken, made guacamole, black beans, pickled red onions, and toasted some flour tortillas, as well as mixed the shredded chicken with red bell slices and onions, and sauteed. Soft chicken tacos and black beans were dinner.

Dessert was encapsulated pina colada over pineapple and coconut snow with marschino cherry foam. This was first foray into molecular gastronomy. It's not perfect but a pretty good first try.

Turkey sandwich for lunch. I am peeved that I had no lettuce. When I opened the wrapper the whole head was rotten.

Dinner will probably be leftover turkey dinner with green beans as the veggie.

Whenever I buy a head of lettuce, first thing I do is cut or hand remove the good leafy parts, rinse in cold water, then store in gallon zip lock bags.
It always stays crisp that way.

I just indulged in a piece of Bob Evans strawberry supreme pie.
Dessert first? Lol

Looks good Sass. There are no Bob Evans around here. BUT I had the Lemon Supreme pie once on vacation and loved it.

Well DD wanted turkey sandwiches for dinner. She bought a loaf of seeded sliced Italian bread and butter lettuce. Add some mayo and stuffing to the sandwich and cranberry sauce on the side and it was very good.
