The beets came from CSA and do not have tops this year. I normally cook the tops like spinach. The herbs on the beets are chives and mint from my herb garden, and cilantro and basil from the CSA.

I've got everything except the beets. Farmers market here I come. Got to plant some in my garden.

I have all the stuff except the beets, too.

Copied and saved for when my Dad (beet lover) comes to visit in a couple of weeks.

I love beets fixed any way. I didn't have sherry vinegar so mixed Portogee sherry and Alba Spanish vingar together. It was all good and pleased how the chocolate mint came through.

John, I've been thinking about this dish ever since you posted it!

I bought two bunches of small beets at a Farmer's Market yesterday - one bunch of red beets, one bunch of golden beets.

I'm going to make this salad over the weekend, subbing parsley for the tarragon. Not sure about the mint - do you like it in there?

Anyway, how do you like this best - warm, room temp. or cold?

Lee - You will like the salad and warm is fine but like I like it cold best. You will have to make it today or this evening then.

Parsley would be good, too. I have a bed of chocolate mint so a chuffed to find recipes I can find to use it.

I hope you enjoy the salad.

One of the items in our food line is pickled beets, the small ones. I love them cold. Think maybe that might work in the salad? CF:idea:

I bet it would. By the time these beets marinate in the vinegar they taste pickled.

I've got a lot of beets and didn't get them canned before surgery. I hope they are still good in a week or two. I'd like to pickle a few dozen eggs in beet juice, too.

That salad looks very good. I just got some fresh beets at the farmers market this morning. Mmmmmm

Johnny, we also do pickled chicken eggs and quail eggs to. Some are in beet juice. Some are done with habanera chilies. CF

I love Eggs and Beets Pickled together .... a great snack, or a salad replacement...



Zippy Pickled Eggs

36 hard boiled eggs, peeled
3 (15 oz.) cans small whole beets, drained
3 Tbsp kosher salt
4 1/2 Cups cider vinegar
Juice from the beets
4 1/2 tsp. sugar
2 Tbsp peppercorns, crushed
4 Red Habanero peppers ( stems removed and halved, length-wise)
1 can chipotle Jalapeno peppers with liquid
12 cloves garlic, crushed
1 Tbsp crushed allspice
1 1/2 tsp. ground turmeric
3/4 tsp. celery seeds
1 lg. red onion, thinly sliced

Combine the ingredients except eggs in a non-reactive saucepan and bring to a boil.
Reduce heat, cover and simmer for about 10 minutes.
Remove from the heat and let cool for about 10-15 minutes.
Layer the eggs with the mixture into a CLEAN 1 gallon glass jar, put the lid
on and place in the refrigerator.
It will take about a week for the eggs to absorb the flavorings.
They will keep, if refrigerated, for several weeks.
Makes: 1 gallon, depending on the size of the eggs.

Variation:
Use less eggs and add hot link sausages or Vienna sausages.

LT, I'm not a fan of spicey hot things except Indian and Asian dishes. I'm not sure I'd like that egg recipe. I use the Betty Crocker recipe.

John, Dad won't be here for another couple of weeks and I couldn't wait! I made the salad over the weekend, except for adding the herbs.

I'll post a picture and my impressions when I serve it, maybe tonight.

It's WONDERFUL! :bounce:

No real point in mixing golden beets with red beets, since the deep red juice colors the orange beets.

I love the dressing!

Used chives, parsley, a little mint and a little basil.

I loved it!

I'm glad you liked them. I'll do it again next week when I'm feeling perkier.

Did you eat your greens? Beet green re better than spinach to me. I add a bit of vinegar at the table.

Not yet, but I did cook them. I agree - I like them better than spinach. And, yes, I sprinkle vinegar on them at the table, too!
