What's For Dinner - Wed, July 14th

Hubby is feeling kind of puny, so it's going to be comfort food....chicken and dumplings.

What's everyone else having for dinner?

I'm thinking about making watermelon ice cubes to plunk into Vodka later. Have some frozen grapes (for drinks, etc.) too. Ever try 'em? Will defrost some grapes & go with an oldie - chicken (breasts) veronique with rice.

We grilled out on the houseboat. We had pork chops, new potatoes and corn on the cob. Ummmmm, this is the life. I'll be reporting in from the HB all week. :D

We went to Mandeville on the other side of Lake Pontchatrain today...crossing the longest bridge over water in the world, for po'boys. Not real keen on making dinner tonight.

Looking at leftover penne with meatballs and a tossed salad. We have a key lime pie I made yesterday for dessert.

Watermelon ice cubes to plunk into vodka.....:applause::applause::applause:

Something without carbs, (or very little). I think a stir fry. Onion, Spinach, bean sprouts, celery, mushrooms, London Broil.
I am on day 3. of this diet. ug.

I wasn't going to tell, but what the heck! Maybe this belongs in the old 'confession' thread.

I got home from work, and SousChef said "I want to go out and have something disgusting for dinner". Now, SC rearely asks for anything specific when it comes to meals. The standard line is "Whatever you want to do is fine with me". So I'm happy to accomodate.

SS: "What is it you want?"

SC: "A fasts food hamburger."

SS: "A hamburger's great. Let's go up to Woody's".

SC: "No. I want a fast food hamburger, like Burger King or McDonalds or Checkers"

SS: Oh. Uh Well. OK, I guess if that's what you want. I guess. But you're driving. (My license is expired).

SC: Where do you want to go?

SS: Oh, no you don't! This is your little adventure. You have to pick.

So we ended up at McDonalds :dizzy:. It's been a loooong time. We each ordered something, and we shared a small fry. I ate about 2/3 of my swiss-mushroom burger and just couldn't finish it. I sure hope we don't have to do that again soon.

Sorry, that's the best I can offer to last night's dinner thread. I am ashamed.

How long is that bridge Vera? The Chesapeake Bay Bridge is 17 miles, and I thought that was way to long. Is there a toll on the bridge?

We had meatloaf mac-n-cheese, and a vegetable medley of sorts (read that as "experiment").

Fresh from the garden I had Squash, Roma Tomatoes, and Zucchini. The onion is store bought.

Cut everything up and place in a large bowl. In a smaller bowl, mix together:

2 Tbsp Oil
2 Tbsp Rice or Red Wine Vinegar
1 Tbsp lemon Juice

Whisk well and pour over veggies. Add salt and pepper to taste, and then toss to coat well. Place in a baking dish and bake covered for 25 minutes. Uncover and bake 8 minutes longer to reduce excess liquid. I really enjoyed this and will be making it again.
