Re: Dry brined, reverse seared steak

I'm sure he meant 275, Doug. When you figure foods are often smoked at 225 it might make more sense to you. Low and slow and then a hot fast sear. My grill is 300 when I do mine (indirect at first).

Re: Look what showed up at my house!

Take him to a vet or humane society and see if he is chipped. You never know. They have universal scanners, but they don't always work like they are supposed to and sometimes the chips migrate to...

Re: Attempted terrorist stopped by heroic passenger

I talked to someone originally from England this morning, he flew back here yesterday. He said airport security in England was upped to body checks on everybody, not just spot checks. And also,...

Re: Any melt in your mouth Butt recipes??

Lefty, what IS your method? How is it different from 275F for 4 hours?
Do you cook it lower and slower?

Here ya go, Cali. I knew I had a pic of some cooked ABTs around here somewhere.

Re: I need an ultimate "finger food" recipe

I've made ABTs with shrimp in them in place of the lil smokie. IMO, the shrimp was lost between the smoking, the jalapeno and the bacon. I'm sure you could stuff those shrooms with crabmeat or other...

Re: Any melt in your mouth Butt recipes??

Sprinkle with pepper, salt, garlic powder, lay a few onion slices on it, put it in a glass casserole dish with about 1/2" of water, cover, cook at 275F for 4 hours, uncovering the last 30 minutes.

Re: Family Dog Survives 98 Days on Deserted New Jersey Island

Amazing story. Dogs rarely go feral like cats and can rarely survive on their own. They need a pack to hunt and learn from. Very cool story.

Re: I need an ultimate "finger food" recipe

Just to say, ABTs do reheat very well. I see no reason these can't be prepared before you get there. Then you can enjoy the party more instead of spending your time cooking.

Re: The fish are bitin' in Naples

Have you tried logging out and then back in, Buzz?
That has fixed this problem for quite a few of us when this has happened before.
