We had pan fried (fresh from store not vacuum sealed) bone in smoked pork chops with baby spinach and arugula sautéed/wilted (with a small bit of all purpose seasoning) in butter and smoked olive oil...

As for Justin I loved his show. He actually taught about ingredients. One show dealt with file' gumbo. He took us to where they harvested and made file' powder.

Madeleine Kamman was on PBS YEARS ago. She was French and cooked French dishes. That's where I first heard of Duck confit. She would tell stories of growing up during WWII. I really liked her.
