One of my favorite vegetables, and so many things to do with it!

I like it just cut in half, salted and peppered, wrapped in foil and roasted cut side down for an hour at 350. Topped with butter....

Pork Tenderloin with Dijon Marsala sauce

I don't remember where I got this recipe - it was in my files.

It was way too cold to outside grill the tenderloins yesterday, so I looked for a recipe to roast them indoors. This looked good.
