Lee, this is a recipe I use. I also add some chopped onion. I do sub the pancetta for bacon but either way would be good. I've also done these on the grill with a grill pan.

My understanding is the Polish pickle is pickled longer and has more garlic added along with mustard seeds. I don't imagine a big taste difference with it being added to the salad. I'm no expert. :)

That meal looks delicious and familiar!! We Polacks have made our potato salad this way for years, minus the peas because too many did not care for them.

As for boiling the potatoes with the skins...
