Re: Nachos

Cheddar is not a good melting cheese - I would be surprised to see it in a nacho recipe.
Mozz melt, but gets stringy at high heat.

Monterrey Jack would be my first choice.

Re: Skinny Chicken, Spinach, Artichoke Skillet

Along with a bit of heat, you needs an umami bomb. I would add a tablespoon of tomato paste to the middle of the pan, and stir it a minute to darken it, before you add the liquids. Some other ideas...

Re: Let's Talk ... Sauces, Dips, Gravies Etc.

Lee,
Copycat Bang Bang Sauce is just mayo blended with sweet Thai chili sauce, and sriracha (or other hot sauce) added to taste. If you like the flavor profile, you could just dial back on the...

Re: Corned Beef

Of course you all know that corned beef isn't Irish.

I'm having cockles & mussels. (Or at least clams and mussels- impossible to find real cockles here.)

Re: Type of Cell Phone

Not really. New iPhones start at $399, if you buy direct from Apple. You can find deals elsewhere. However, bigger models go up from there. If you get the biggest iPhone7, with 256 GIGABYTES...

Re: Tajin

I use it all the time on Fish or shrimp tacos and Mango salsa.

Re: Duke's mayonnaise

I've used it on and off, depending on where I was living at the time.
It's mayonnaise. I really don't see much difference between Duke's and Hellman's.
Never understood the hype.

Returned it and got a...

Re: the purist burger

C-man, it's the diced onion that caused your problem. The meat will bind together, especially if you put salt in it, but the diced onion comes between the meat fibers and prevents it.
