Cheddar is not a good melting cheese - I would be surprised to see it in a nacho recipe.
Mozz melt, but gets stringy at high heat.

Monterrey Jack would be my first choice.

Along with a bit of heat, you needs an umami bomb. I would add a tablespoon of tomato paste to the middle of the pan, and stir it a minute to darken it, before you add the liquids. Some other ideas...

I use it all the time on Fish or shrimp tacos and Mango salsa.

I don't find it very spicy - just flavorful. There is a but of lime in the mix, so the flavor is more complex than just chilis.
