One thing about stock lid mounted thermometers is that they can give readings of up to 50F lower than actual temperature at grate level depending on how much meat you've loaded the smoker with. So...

I was thinking of getting one for myself. I live across the street from Elysian Park and there are U Tube videos of guys prospecting for old coins. Pretty neat stuff.

You will almost always get that "fall-off-the-bone" cook by using foil. But leave the slab in the foil too long, like 2 hours for instance, you'll end up with mush.

They were undercooked. How accurate is your temp gauge?
Also, I would not determine when ribs are done judging by its internal temp. A better determination can be made by inserting a toothpick...

Does it really matter what liquid you use? I thought the idea of BCC was to simply create a moist environment in the cavity, not to add flavor.

If space in an issue I do BCC. If not, I prefer either rotissed chicken or spatchcocked.

If it's a roast I use a probe. If it's a steak I go by time and feel. Rack of ribs I use a toothpick.
