I mentioned the ravioletti pasta I picked up at the market... Here's my idea for caprese-like pasta stuffed tomatoes:
Hollow out some large tomatoes (beefsteak). Chop a tomato or two & set aside. Cook & drain the pasta, & run under cool water, drain again. Drizzle some vinaigrette dressing into hollowed out tomatoes, fill with ravioletti, a sprinkle of basil, & chopped tomatoes. Top with cubed or shredded mozzarella cheese. Chill, or place under the broiler until cheese is melted.
