RED & GREEN POTATO SALAD
2 lbs Red Potatoes
2 TBL PLUS 2 tsp. Sea or Kosher salt, divided
1 1/4 c. Mayonnaise
2 TBL white wine vinegar
1 to 2 Jalapeno Peppers, seeded and chopped
1/2 tsp. black pepper
6-8 green onions, thinly sliced (use some of the green)
1/4 c. fresh parsley or cilantro, chopped
Place potatoes in a 6-qt. pot; cover with water, about 4 qts.
Bring to a boil over medium heat. Add 2 TBL salt.
Reduce heat and simmer until the potatoes are tender, 10-15 minutes.
Drain and cool; slice, about 3/8 "
Combine the Mayonnaise, vinegar,salt and pepper in a large bowl.
Stir in remaining ingredients and the potatoes. Toss gently to
combine.
