Flour questions
I wish I could buy specialty flours in small amounts, for the rare times when I need them. But alas, I've been storing opened bags of bread flour and self-rising flour in air-tight Rubbermaid containers for years.

The bread flour has a best used by date of 2010, and the self-rising flour's best used by date is 2019.

I don't see anything that looks like weevils in either bag. No smells.

I know the self-rising flour loses it's magic after awhile, but is the bread flour good indefinitely?

flour has oils - which sooner or later go rancid. now, that said, the amount of oil and the degree of yuk can be quite low-to-just-an-off-taste.
the time also depends on how they are stored.

I keep whole wheat, corn meal, cake, pastry, etc in the freezer. only AP and bread flour are in the cupboard as they get used up +/- monthly.

bread flour from 2010 is past my better judgment . . .

do you have Bob's Red Mill in your area? they normally have small bags of stuff.

I don't stock self rising - it's just AP with baking powder.

Yes, I do, CMan! I will toss the bread flour and look at Bob's stuff to replace it if I need to.
